1 - 8½ oz package corn muffin mix
⅓ cup BOOST® Vanilla Drink
Preheat oven to 375°F.
Spray muffin cups with nonstick cooking spray or line with paper baking cups.
Combine BOOST® Vanilla and egg. Add to muffin mix; blend well. Batter will be slightly lumpy.
For best results, let batter rest 3-4 minutes before filling cups. Fill muffin cups ½ full.
Bake 11-13 minutes or until golden brown.
