Panna cotta with red berries

160 ml milk (1.5% fat)

100 ml low-fat cream (10%)

25 g sugar

2 vanilla beans

peel of ½ orange, grated peel of ½ lime, grated

2 pieces gelatin

90 gr MERITENE Mobilis Neutral


150 g mixed red berries   10 g sugar

2.5 g potato starch (½ tsp.)

25 ml red wine

50 ml red berry juice


Heat milk and cream in a pot, add the sugar and vanilla beans and boil for 2 minutes. Remove from heat and add the gelatin. Remove the vanilla pods and add orange and lime peel. Mix in the MERITENE Mobilis Neutral. Put in small molds and refrigerate for 6 hours. To prepare the berries, put the sugar, red wine and fruit juice in a pot and reduce by half. Bind the liquid with the starch and add the berries, cool and serve at room temperature with the panna cotta.
